We all love pastries and pâtisserie (even though our scales might not…) and nobody does this better than the French.
We were very lucky in January to welcome French pâtisserie expert Philippe Paul Nicolle to the kitchens of the International Culinary Institute Switzerland to run a series of classes with our culinary students.
Chef Nicolle took our students through a variety of breads, cakes and pastries teaching them some of the finer skills of this refined form of cuisine.
Our students were highly appreciative of the new skills and techniques they were exposed to and can’t wait to put this into practice.
Everyone at the school would like to thank Chef Nicolle for taking the time to visit us and we hope to be able to welcome him back again in the near future…
