Le Cordon Bleu welcomes Back Daren Chin for a culinary demonstration
Le Cordon Bleu Paris welcomed March 2012 Grand Diplôme graduate Darren Chin for a culinary demonstration.
Originally from Kuala Lumpur, Malaysia, Darren worked in the kitchen of his father’s business, Dave’s Deli, for more than 10 years. Having had no previous culinary training, he decided to enroll at Le Cordon Bleu in March 2011.
Le Cordon Bleu encouraged Darren to register for the 9th Sandwich World cup organized by Délifrance. Darren demonstrated his skills and expertise and was the winner of the competition in which he showed how European influences are still used in South-east Asian cuisine. He prepared a meat sandwich combined with herbs and spices from Malaysia, Vietnam and other Asian countries.
Le Cordon Bleu is very proud of Darren’s achievement, and on July 16th, organized a demonstration at the school to present his sandwich recipe. Mr. André Cointreau, President of Le Cordon Bleu International, was present to welcome S.E. Mr. Tan Sri Abdul Aziz Zainal, his spouse, Madame Puan Sri Rositah Md. Mawihis and the Malaysian Embassy delegation. This event reinforced Le Cordon Bleu’s ties with Malaysia where a partnership with Sunway University has been in place since 2010. Darren’s explanations were instructive, and he shared his knowledge of the local ingredients used for the preparation of his dish. The sandwich was served in a bamboo box and was accompanied by a small julienne salad and tonka vinaigrette – the exact way in which it was presented during the competition. Darren successfully proved how the techniques he learnt at Le Cordon Bleu can be applied to Asian ingredients to create a memorable dish. Guests and students were very impressed, and we congratulate Darren on what he has accomplished.
Darren’s stay in Paris is coming to an end and he has already set up his future objectives. Upon his return to Malaysia; he will continue to develop his business, create new recipes and pass on the culinary techniques learnt at Le Cordon Bleu to his employees.
