An evening in honor of Le Cordon Bleu Paris alumni
On November 12, Le Cordon Bleu Paris held a cocktail reception in honor of the schools alumni.
The evening began with a cuisine demonstration by Shynia Usami, a Japanese alumni from 2005. Shynia currently works at the restaurant Thoumieux, directed by Chef Jean François Piège. In addition, Boa Feiyue, a former student from Shanghai and the Chinese champion of vegetable and fruit sculpture, presented one of his creations.
This reception was made special by the presence of Ernesto Paolucci, the former Le Cordon Bleu Paris alumni, who graduated in 1949. Ernesto arrived in France in 1944 during the Normandy landings. He was given a scholarship by the American government for his training at the Cordon Bleu. Ernesto did his studies side-by-side with one of our most distinguished alumni Julia Child! Amongst the other students who came from afar for this event, we would like to salute in particular the presence of Luciana Ghetu, who opened a pastry shop in Romania and the Brazilian Roberto Ortiz, now a restaurant owner. The participants shared their memories and presented (discussed) their professional careers, often exceptional.
The theme of the evening was Spain, in harmony with the the “Cocina Espanola” program (Spanish Cuisine program) that has been launched at Le Cordon Bleu Madrid. The Chefs prepared a menu with tomatillo, paëlla, Manchego and sangria with the excellent advise of our former student from Alicante, Monica Martinez. The music was mixed by our own pastry Chef and DJ Xavier Cotte.
We wish to give a very warm thanks to all of our alumni, as well as to the Chefs of the Cordon Bleu who participated in this exceptional evening.
